Italy runs on carbohydrates. Pizza, pasta, and bread are the foundation of the daily meal. Yet the adult obesity rate hovers near 12 percent. In the US, it sits close to 40 percent. The difference is not the carbs themselves. It is the context. Portion control. Whole ingredients instead of ultra-processed fillers. A society built around daily walking rather than driving. It is a stark reminder that what you eat matters, but how you eat matters just as much.
