You have probably heard the story about archaeologists eating 3,000-year-old honey from an Egyptian tomb. The snacking part is a myth. But the intact ancient honey is completely real. Bees do not just make sweet food. They manufacture a chemical fortress. Ripe honey is 80 percent sugar and barely 17 percent water. That leaves no usable moisture for bacteria or fungi to survive. Add to that a highly acidic pH and a specific bee enzyme that literally produces traces of hydrogen peroxide. When it is sealed away from the elements, it simply cannot go bad. It outlasts empires.
